How do you select a specific set of netCDF variables and save them to a .csv format using the command prompt?

I have a netCDF file called "" with many variables. I am aware that I can convert the whole file (netCDF) into a .csv format with the following prompt command:

sds copy test.csv

However the sample file I am working with is huge and I am only interested in one of its variables called peak_wind_speeds. Is there a way that I can extract just these values and save them to a new .csv file using the command prompt? Can anyone suggest a solution?
